1/2 cup butter
1 onion, chopped
2 1/2 cups finely chopped ham
2 1/2 cups diced & boiled potatoes
Salt & pepper to taste
Melt 1/4 cup of butter in a pan and add onion and saute till onion is tender. Combine onion, ham, potatoes and salt & pepper in a bowl and mix well. Melt remaining 1/4 cup of butter in pan and spread out the hash mixture in the pan. Cook over medium heat till brown on the bottom. Turn hash over and cook on the other side till brown. The hash should have a nice brown crust on both sides when done.
