2 cups fresh mushrooms, sliced
1 tbsp olive oil
1 cup red potatoes, chopped finely
3 carrots, quartered lengthwise & thinly sliced crosswise
8 cloves garlic, thinly sliced
3/4 cup lentils, rinsed & picked over
1 cup canned crushed tomatoes
3/4 tsp ground cumin
3/4 tsp ground ginger
1/2 tsp rubbed sage
3 cups water
1 large onion, halved and thinly sliced
2 tsp sugar
1 cup frozen peas
In a large saucepan heat 2 teaspoons of the oil over medium heat. Add the carrots, red potatoes, and garlic, and cook till softened, about 5 minutes. Stir in the lentils, tomatoes, cumin, ginger, sage, mushrooms. Add 3 cups of water and bring to a boil. Reduce to a simmer and cover and cook till the lentils are tender, about 35 minutes. In a large skillet heat the remaining 1 teaspoon of oil over medium heat. Add the onion and sugar and cook stirring frequently till the onion is lightly browned, about 5 minutes. Add the peas to the stew and cook for 2 minutes to heat through. Serve the stew topped with the browned onions. Serves 6
