1/2 cup chopped onions
2 tbsp margarine
1 8 1/2 oz pkgs. corn muffin mix
1 8 oz can whole kernel corn, drained
1/2 cup fat free sour cream
Cook onion in margarine till tender but not brown. Prepare muffin mixes according to pkg. directions, adding onion mixture to batter. Fill paper bake cups in muffin pans 2/3 full. Stir together corn and sour cream; spoon about 1 tsp mixture atop batter in each bake cup. Bake in 400 degree oven 15 to 20 minutes. Makes 20- 24 muffins
