Something nice and easy to do with left overs is fritters.
These are made from a standard pancake/pikelet mixture and all you need to do is mix in some,
cooked vegetables, or
chopped ham or chicken, or
chopped corned beef, or
cooked fish or seafood,
anything really that is cooked can be added to the pancake mix.
Place tablespoon fulls into a buttered/oiled heated fry pan and cook just like pancakes.
Add parsley/herbs, salt and pepper to taste.
Also nice as a dessert if you do pineapple rings, dust with cinnamon and sugar served with a scoop of ice cream.

Frittattas are good, too. Uses a lot of eggs, though.
Or make fried noodles: leftover plain pasta fried until crispy(use a plate to weight them in the pan) and top with leftover meat, veggies, sauce, etc. I've never tried it, but a friend fries the pasta, then tops it with melted butter, cinnamon and sugar. Claims it tastes like a doughnut??

I LOVE frittatas too. However, since I live in an RV during school, I cannot make them as my oven is too small for a frying pan and its handle.
What does everyone else do with leftovers?

I like frittatas also, slice into wedges and serve with salad.
I like them with cooked rice mixed into the egg mixture, with veges.
I like them with cooked pasta mixed into the egg mix, with veges

I usually freeze mine in one portion servings for taking to work for lunch. Luckily I have the freezer space to do that. Unfortunately I dont have any good creative ideas at the moment

What does everyone else do with leftovers?
If it's leftover vegetables, I like to make vegetable soup. But for most everything else, I like to freeze the leftovers and then pull them out for another meal a few months later.

I love fritters ...I do small corn fritters as hor d'oeuvres served with a reduced maple syrup.

Never thought of doing small fritters an having them as finger food, I like that idea. A bit of sour cream with the corn.
Amazing what you can do with one simple mix. Sometimes it's out of necessity and that is the mother of all great inventions LOL

They had something similar to that on the Food Network Challenge tonight, except it also had creme fraiche and caviar. I thought you could really put anything on these to make them into appetizers.
