1 1/2 cups milk
3/4 cup granulated sugar
1 1/2 cups brewed coffee, chilled
1 tsp vanilla
2 cups heavy cream, divided
In a heavy saucepan combine milk and sugar. Heat, stirring occasionally till sugar is dissolved and mixture just barley boils. Remove from heat; let cool to room temperature. In large pitcher combine chilled coffee, cooled milk mixture, vanilla and 1 cup cream. Pour mixture into loaf pan and freeze at least 2 hours or till slushy. In a mixing bowl with an electric mixer beat remaining 1 cup cream till stiff peaks form. When ready to serve spoon slush mixture into coffee cups and top with whipped cream.
Makes 5 ( 1 cup) servings
