I have bought so much canned salmon this winter when it was on sale for $1.00 and am tired of salmon croquettes! What do you make with canned salmon? I'm open as far as any other ingredients.

You can use it in a casserole, basically the same as you would tuna.

When DebK come back from her vacation, I'll have to mention this to her. She just loves salmon!
I just have to ask what is it about the flavor of salmon that you like? Everyone I know loves it and I cannot seem to even like it. I've even had it fresh. Maybe if I understood why people liked it? LOL

I guess we really like it because it is something hubby can have on his diet and it is good for him! LOL We had croquettes as I was growing up and that is theonly way we ever ate it. Bit now we like it grilled or broiled also with different marinades on it. Can't really tell you WHY we like it , but we do! An Walmart has a whjole salmon frozen on sale usually once in a while for right at or under $10.00; can't beat that price!

Salmon Patties
1 can of salmon
1 egg
1/2 cup of flour
a few sprinkles of peper
1/4 cup of the salmon juice
heaping tablespoon of baking powder
mix salmon, egg, flour and peper. Set aside. Mix the baking powder into the salmon juice and stir until it foams up good then pour it into the salmon mixture and stir. Heat some oil in a skillet and drop the salmon into the oil by tablespoons and cook for a couple of minutes then turn and cook for a couple more minutes. Take out and put on a plate lined with paper towels.
These are really good and lighter tasting than croquettes. My mom use to make croquettes all the time when I was a kid but can't remember how she made them now. How do you make yours? I got this recipe from my aunt who lived in Alaska for about 20 years.

2 cups cooked rice
1 1/2 cups chopped cooking apple
1 10 ounce pkg frozen broccoli spears, cooked & drained
2 cans (6 1/2 oz each) pink salmon, drained
1 pkg. (7/8oz) Hollandaise sauce mix, dry
Preheat oven to 350 degrees. Combine rice and apple in lightly greased (spray with nonstick cooking spray) 1 1/2 qt casserole. Place broccoli spears in single layer over top of rice. Place salmon over broccoli and prepare sauce according to pkg. directions. pour over salmon and bake 10 to 15 minutes or till heated. 4 to 6 servings
Just found this recipe, may try it for supper so it is untested, but sure sounds good!:)

Found this one, going to make it for lunch Friday; sounds really good!
1 1/2 cups water
1 pg. ( 10 oz) frozen green peas
1 medium carrot, sliced very thin
2 tbsp onion, chopped
1/2 tsp salt
1/2 tsp pepper
1 1/2 cups dry minute Rice
1 can salmon, drained and cleaned
1/2 cup chopped dill pickle
1 cup fat free mayonnaise
1/4 cup milk
Cook peas, carrots, onion, salt and pepper to 1 1/2 cup boiling water. Stir in rice. Cover, remove from heat and let stand 5 minutes. Fluff rice with fork Cover and chill. Stir in salmon, pickle, mayonnaise and milk right before seving on salad greens. 6 servings

Am new to this website, but am certainly enjoying it.
Speaking of Salmon, I am a lover of Salmon, not fresh tho.
I enjoy it in a sandwich, draining it and putting it on bread & making a easy sandwich , especially on these hot days we are having. Many times when opening a can , I just eat it right out of the can, it never making it any further into a meal item.

I buy the cheapest kind of salmon, and pick thru it to remove bones/skin.

I used to buy the skinless and boneless because once I cleaned the others I couldn't eat it! LOL I've finally gotten over that to some point, if I clean it in the morning I can eat it by that night! LOL

Oooh, now that's exciting! I've never liked salmon too much. I don't like the canned, and I dislike fresh even more. There's just something about the flavor. :eek: I've done the patties or salmon loaf about once a year, but this one sounds very different and I'll give it a try. Thank you for the recipe!

The Salmon Broccoli Bake is good; you could also just use can tuna if you end up not liking the salmon, but we enjoyed it with the salmon! Let us know how it faired with you!

We live on the Rogue River in SW Oregon and fish for salmon all year long. We eat fresh, freeze & also can the salmon and tuna (have to buy the tuna to can but the folks around here won't eat the store bought fish).
This is a favorite recipe of my husband's which he also makes. Many times we have it for dinner but he also makes it for breakfast when we have guests. It goes together so quick especially when a store bought crust is used.
One morning we served it to guests and one of the guys said he did not like quiche. He took one bite and said how good it was and then turned to his wife and told her to be sure to get the recipe and then asked for more. Seems everyone asks for the recipe so here it is.
Salmon Quiche
Crust: (or use store bought ready made one)
6 tablespoons butter
2 tablespoons shortening
1 1/2 cups flour
3 to 5 tablespoons very cold water
Filling:
½ cup mayonnaise
2 tablespoons flour
2 eggs, beaten
½ cup milk (sometimes half & half)
7 1/2 ounces salmon drained, boned and flaked**
8 ounces grated Swiss cheese or your choice of cheese
(We use mixture of/or jack, cheddar & mozzarella or whatever we have).
1/3 cup sliced green onions (we use chopped onion & chives)
Sprinkle top with dill weed (optional)
For crust: cut butter and shorting into flour until it resembles cornmeal. Make a well, add 3 tablespoons water: blend with a fork or pastry blender: if it seems very crumbly, add more water: roll into a ball, wrap in wax paper and refrigerate for 15 to 30 minutes: roll out dough to fit a 9 inch pie or quiche plate
For filling: mix the mayonnaise, flour, eggs and milk until well blended: stir in salmon, cheese and onions. Pour into pastry shell. Bake at 350 degrees for 40 to 45 minutes.
** This equals a one 1 lb. can of store bought salmon OR ½ pint of our home canned salmon.
** Crab may be used.

Oh thank you! I never thought of quiche with salmon; don't know why not; it sure sounds good! Thanks for sharing! DH is on such a low fat diet will a few subs this will be a good one for him with the salmon!

This recipe came off the internet several years ago and we have it quite often, Our friends also like this salmon loaf and have asked for the recipe. We catch & can our own salmon so have quite a bit in the pantry.
Salmon Loaf
1 lb can salmon
2 TB melted butter
1 cup soft bread crumbs
3/4 tsp. celery salt
3/4 cup milk
1/2 tsp. parsley flakes
2 eggs, well beaten
1/4 tsp. basil
2 TB instant minced onion
1/4 tsp. dry mustard
1/4 cup sliced stuffed green olives (optional)
1/4 tsp. black pepper
1 tsp. lemon juice.
Drain and flake salmon; add remaining ingredients. Mix well, Bake in
loaf pan for 1 hour at 350. Serves 6

Kricket, that must be so nice to be able to catch your own salmon! Lucky you! I have to rely on when the store has canned on sale. Every now and then the 1 lb. can will be on sale for $1.00 each so I stock up then. Usually it is almost $4.00 a can! So I usually buy 20 cans or so at a time and that lasts us till the next sale.
I'm printing your salmon loaf recipe sounds good! I know I would like a white sauce with peas in it poured over my sliced of it. DH will eat it as is. I cook the white sauce and the peas separate so DH can have just the peas, he is not fond of any type of gravy and usually the sauces he just leaves them on his plate if he cant separate it from the dish being served.

I would like to make some of these canned salmon recipes but there are always so many bones in the canned salmon. What's a good way to quickly clean the bones out of the meat? It seems to take me FOREVER to do that.

Barbszy, I just open the can into one bowl and pick up a piece and scrape off the skin and the salmon usually is in several large pieces that will separate so you can take a fork and scrape off the bones. Actually most people leave the skin and the bones and just mash them up into it; I don't I just can't eat that....all I would see would be the skin! LOL The bones that are in it are okay to eat; they mash up great and unless someone sees you mashing them into the salmon you'd never know they were in there. Try it with some as you are cleaning it and you'll be surprised at how unlike those bones are like what you would think. They are supposed to be a great added source of calcium and I guess you've figured out whenever you eat salmon (except the fillets or steaks) in a restuarant; yep those bones are mashed right in there! LOL Let me know how it turns out for you. You can buy skinless boneless salmon in cans but it is very expensive compared to the cans that aren't, We rarely ate salmon till I could get over the cleaning process because those little cans are so high priced. This is a recipe I originally got online somewhere and did some changes to it; it is really good. Might be a good way to "introduce" salmon to the family.
Pan Fried Salmon Burgers
2 15 oz cans salmon, cleaned and flaked
1/2 cup mayonnaise
2 tbsp or hot sauce
2 garlic cloves, minced
1 medium shallot, minced
1 tbsp minced fresh ginger
1/2 tsp finely grated lemon zest
2 tbsp chopped cilantro
1 tbsp chopped mint
Kosher salt and freshly ground pepper
1/2 cups Japanese panko or plain dry bread crumbs
1/4 cup sesame seeds
1/4 cup vegetable oil
Avocado Aioli, for serving
6 onion rolls, split and toasted
Scrape the salmon into a bowl. Mix the mayonnaise with the hot sauce, garlic, shallot, ginger, lemon zest, cilantro,mint,salt and pepper. Add the mixture to the salmon along with 1 cup of the panko. Fold the salmon mixture together with a rubber spatula. With lightly oiled hands, pat the mixture into 6 burgers. Cover with plastic wrap and refrigerate for 2 hours. In a shallow bowl, mix the 1/2 cup of panko with the sesame seeds. Pat the mixture onto the salmon burgers. In each of 2 large nonstick skillets, heat 2 tablespoons of the oil until shimmering. Add 3 salmon burgers to each skillet and cook over moderately high heat, turning once, until well browned but barely cooked in the center, about 7 minutes. Serve on buns with your favorite toppingsand dressings. Serves 6
