Our black walnuts are falling and so are the persimmons. Does anyone have and tried and true family recipes to share?:D

This recipe came from one of DH's cousins, she made it and it was heaven! Her "secret" she says is to use real butter!

Persimmon Pudding

2 cups persimmon pulp
1 cup sugar
1/4 cup butter, melted
3 eggs
1/2 cup milk
1/2 cup buttermilk
1/2 tsp salt
1 1/2 cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon

Combine persimmon pulp, sugar, butter and eggs and mix well. Combine dry ingredients and add alternately with milk and buttermilk and mix well. Pour batter into a greased 9 x 12 inch pan and bake at 325 for 1 hour. Chill and serve with whipped topping.

A lady in town gave me this recipe, so I thought I'd post it here in case anyone else needs black walnut recipes!

Black Walnut Cake

2 cups flour
1 tbsp baking powder
1/4 tsp salt
1 cup butter
1 1/2 cup granulated sugar
1 tsp vanilla extract
3 eggs separated
3/4 cup milk
1 1/2 cups ground black walnuts

Preheat oven to 350 degrees. Sift together flour, baking powder and salt. In a large bowl cream together the butter and sugar until light and fluffy. Add the vanilla and egg yolks. Beat the mixture well. Alternately add the dry ingredients and the milk in small portions to the batter. Mix well. Beat the egg whites till stiff but not dry and gently fold them and the walnuts into the batter. Pour the mixture into a greased and floured tube pan and bake 30 minutes. Cool on a wire rack. Dust with confectioner's sugar and serve with vanilla ice cream.

Found this recipe in an old cookbook from Woman's Day; they turn out great!

Black Walnut Cookies

2 eggs
2/3 cup cooking oil
1 tbsp milk
1/2 cup wheat germ
3/4 cup sugar
2 cups sifted all purpose flour
2 tsp baking powder
1/2 tsp salt
1 tsp vanilla extract
1/2 cup black walnut meats, broken up

Beat eggs with a fork till well blended. Stir in oil, milk, and wheat germ. Blend in sugar till mixture thickens. Sift together flour, baking powder, and salt andstir into oil mixture. Add vanilla extract and black walnut meats and stir. Drop by teaspoonfuls onto ungreased baking sheets. Space about 2" apart and bake at 400 degrees till nicely browned. Makes about 5 dozen

Persimmon Salsa


3 very ripe Hachiya persimmons, cut into 1/2" dice
1 small shallot, minced
2 tbsp red wine vinegar
2 tbsp olive oil
Kosher salt and ground pepper


In a medium bowl, toss the persimmons with the shallot, red wine vinegar and olive oil. Season with salt and pepper. Let the salsa stand at room temperature for 30 minutes. This is good served with roasted turkey or ham!
