This was a winner in a National Chicken Cooking Contest, it's really good!
4 whole skinless, boneless chicken breast
1/4 tsp salt
1/8 tsp pepper
1 can (16 oz) sauerkraut, well drained
4 6x4" slices swiss cheese
1 1/4 cups thousand island dressing
Preheat oven to 325 degrees. Place chicken in a single layer in greased baking pan. Sprinkle with salt and pepper. Press excess liquid from sauerkraut and spoon over chicken. Arrange cheese slices over sauerkraut. Pour dressing evenly over the top and cover pan with foil. Bake about 1 1/2 hours or till chicken is tender. Rye bread on the side!
