Here is a warming soup for a cool spring night!
Black Bean Soup
2 cups uncooked black beans
6 cups water
2 bay leaves
2 tbsp sunflower oil
1 cup onion, chopped
4 cloves garlic, minced
2 cups celery, chopped with leaves
1 cup carrot,diced
1/2 tsp basil
1/4 tsp celery seed
dash of cayenne pepper
1/4 cup parsly, minced
juice of 1 large lemon
1 tsp salt
Fat free sour cream
Wash beans and combine with water and soak 6 to 8 hours. Cook beans in a soup pot covered till soft (about 1 1/2 hours to 2 hours). Pour 2/3 of the beans in a blender and puree. Return to heat and add bay leaves, and simmer uncovered stirring occasionally.
Heat oil in large skillet and saute onions, garlic, celery, carrot, cumin, basil, celery seed, and cayenne till they are tender (about 10 to 15 minutes). Add to beans along with parsley, lemon juice, and salt. Add 2 cups or more water to thin the soup to your desire. Cook another 1/2 hour, stirring occasionally and serve topped with sour cream. 8 servings
