Bowl Muffins
This idea originted on a low carb message board and has really taken off amongst low carbers. (The examples posted here are low options for low carbers, but Non low carbers can use this too--just use regular flour!)
This is more a concept, than a recipe, But I wanted to share, because they are really good and a quick breakfast or dessert or even snack!
The basic idea is you mix flour-ish things with a Sugar free syrup, like Da Vinci and Torani . You can add in an egg to make it puff up more. There are tons of optional things you can add....like coconut, berries or peanut butter, cream cheese, sugar free chocolate chips, cocoa powder...the possibilities are endless!
Microwave for 2 minutes and get something that resembles a muffin in texture. It may resemble a cobbler or a bread pudding, depending on what you add and what flour-ish type thing you use. Increase the amount of liquid to make it more like a bread pudding.
And its fast and simple--you mix it, cook it and eat it out of the same bowl. Thus the name, "bowl muffin". It's a single serving.
1) Use 1/4 - 1/3 cup of your flourish type choice
For the flourish things, use things like:
Carbquik or another low carb bake mix
Almond meal
flax meal
1/4-1/2 tsp baking powder *not needed if using Carbquik-It has it included
Or a combination of the above.
Carbquik gives you a more bready texture. The courser meals give you a more crumbly texture, more like a bran muffin. The courser meals also give you lots of fiber.
2) Add about 1/4 tsp of baking powder if not using Carbquik. (Some people add an egg, also, for extra puffiness)
3) Add in any other things you want: Cream cheese, cocoa powder, peanut butter, berries, bacon, sausage, cheese, chocolate chips, cinnamon, etc.
*You can make a brownie by adding 2 Tbsp of Cocoa Powder
4) Add in your 1/4 cup of liquid, dependent on what type of muffin you are making. ( Or 1/3 cup if using 1/3 cup if flourish item) Usually, you will use a flavored syrup (Sugar free for us low carbers) like vanilla, strawberry, chocolate, but there are tons of different choices and options.
*You can use milk or cream, or low carb milk, if you want a sausage, baon cheese type muffin, or a pancake tasting muffin.
*If you also use an egg, you may need to decrease the amount of liquid by a little, so that you dont get it too moist.
*If you are not using sugar free syrup, or if you want the muffin a bit sweeter after tasting the batter, add in a tiny bit of your favorite granular sweetener.
5) Mix well in a small microwaveable container. Cook in microwave for 2 minutes, till top is spongy.
Eat it right out of the container you mixed it and cooked it in!
These are fast and fun to make, and your imagination is your only limit to the things you can create!
Mix some up and experiment. I think most people will really like them and we can all use fast, easy breakfast and snack ideas!
I just started experimenting with these, and am having a blast coming up with ideas and trying new combinations!
These usually will slide right out of the container you cooked them in, and can also be sliced like bread or cake. They also reheat well. I made mine yesterday a little too big, sand I didnt want to waste it, so I saved a slice for this morning, on a plate. I just uncovered it, sprinkled on a little water and heated it for about 20 seconds in the microwave, and it tasted like I had just made it.
My recent and most favorite version so far has been Carbquik mixed with cream cheese, an egg, and sugar free strawberry syrup.
One day I had a pancake one, made with carquik, vanilla syrup (or can use milk and vanilla extract, with a little sweetener added) and some cinnamon.
If any of you try it, I am curious to hear what combinations you come up with and how you like them.
