1 medium eggplant, peeled & cubed
1 medium zucchini, sliced
1 medium green pepper, cut into strips
1 small red onion, sliced
3 tbsp fat free reduced sodium French salad dressing
2 cups cherry tomato halves
In a large skillet combine eggplant, zucchini, pepper, onion and salad dressing. Cover and cook over low heat 10 minutes or till veggies are tender, stirring occasionally. Stir in tomatoes. Cook uncovered for 3 to 5 minutes more or just till heated through. Serves 4
