View Full Version : Food ideas for fraternity meetings

I am in charge of the food for our meetings for Psi Chi that are held bi-monthly. I would like to have a theme each time, but that may be too much work. Anyway, I was thinking about doing Chinese one time, Tex-Mex another, Italian another, Halloween another, and so on.
I need some ideas for good finger food for these meetings as well as ideas of food and recipes that are delicious as well as easy and quick. Do ya'll have any finger food recipes and food theme ideas for my meetings?

Tex mex would be a great idea
You could do mini tacos,
chips w/ salsa and guacamole (sp?)
Roll up tortilla filled w/refried beans and cheese or any other filling that you have and slice into pinwheels

I posted a great recipe for ****tail sausages wrapped in bacon, sprinkled w/brown sugar and bake. They keep warm in a crockpot and are great!!
Fruit dip and apple slices
A football theme would be fun or a NASCAR theme!
I have a recipe for "faux" turtle candy. They are really easy to make and are so good!!
Do you have to foot the bill for the food by yourself? I hope not!

Thank God that I do not have to foot the bill. I'll have to look for your recipe for the sausages. I vaguely remember it. As for the NASCAR, everyone already thinks I am weird for being into NASCAR as the ppl in my sub-culture are few and far between this far west. lol
I also just thought about making my flips and cutting them into finger food sizes too. I have to think simple and easy to serve and eat since we usually have the FBI behavioral analyst or a forensic psychologist, or even a minister who talks to us about helping the WHOLE person, including spiritual. So, we need to be able to eat and listen to the speaker and eventually ask questions.

I have to say, to be honest, people are just happy to have FOOD at events such as that. They won't even notice that you have a theme, or went to that kind of trouble. They will just be happy you made something delicious.
Go with what's easy to prepare, serve, and eat. Bring lots of it, and you'll do great. I think your Flips would be a big hit, with some salsa on the side.

I thnk the theme is a good idea because it can lead you to different finger foods instead of the same ones each meeting. You don't have to go real fancy, but will open more possibilities of foods that way I think.
Here are some for your Halloween theme
chilli cheese dip ,canned chilli and velveta
block of cream cheese w/ raspberry preserves poured over it and sprinkled w/ a little pepper. spread it on ritz crackers.
meatballs
chip and dip
cheese & crackers
fruit platters.
chili in a crockpot -put small cups to be served in
PUMPKIN PATCH CHEESE BALLS
2 tablespoons pine nuts
1/2 cup butter or margarine, softened
4 drops yellow liquid food coloring
2 drops red liquid food coloring
1 1/2 cups all-purpose flour
4 teaspoon ground red pepper
1 (6-ounce) garlic cheese roll
1 (7-ounce) jar pimiento-stuffed olives, drained
Bake pine nuts in a shallow pan at 350 deg, stirring occasionally, 5 minutes or until toasted; cool. Stir together butter and food colorings in a large bowl. Add flour and red pepper; cut in cheese with a pastry blender until mixture is blended. Shape into a large ball using hands. Press 1 tablespoon mixture around each olive. Using dull side of a paring knife, score cheese balls with vertical lines to resemble pumpkins. Chill 1 hour. Bake on a parchment paper-lined baking sheet at 400 deg for 10 to 12 minutes or until golden. Place 1 pine nut into each cheese ball to resemble stem. Serve immediately or at room temperature, or freeze up to 1 month. Yield: about 3 dozen.

I like your ideas Catlover! I already plan in the future to make tortilla roll-ups and other finger type foods on days when my meetins are scheduled for days when I cannot go home and the food doesn't have to be hot. I like the idea of things I can just put in a crockpot and ppl can just serve themselves!

Thanks! I haven't even written down when our next meeting is. They did tell me that they would be emailing me more details of what I am supposed to do. This week and the last part of last week have been so stressful that I am not going to worry about it right now.

Here is a quick amd easy finger food that would probably work for your meetings!
Beer Cheese Dip
2 cups shredded cheddar cheese
1 pkg dry Hidden Valley Ranch Salad dressing mix
2 8 oz pkgs softened cream cheese
1/2 cup beer (add a little more if the mix seems too dry)
chopped green onion
In a bowl mix the cheddar, cream cheese and salad dressing mix. Grtadually add the beer till mixture is os desired consistency. Garnish with chopped green onion. This is good with crackers, pretzels or veggies

This sounds like a neat recipe. I could use it for other adult type meetings, but not the fraternaty meetings. Some members may not by over 21 and our meetings are on state property, so no uncooked alcohol. lol

Oh I didn't even give that a thought, sorry. But it is quick to fix and you can use it at home for a snack too! As long as you don't have to drive later) LOL

Here's a good mix for making some small sandwiches on miniature buns
Deviled Ham Spread
3 cans (2 1/4 oz each) deviled ham
1/4 tsp dry mustard
1/2 tsp prepared horseradish
1/4 cup chopped stuffed olives
2 to 4 tbsp mayonnaise
Combine all the ingredienmts in a bowl and blend. Makes about 1 cup. enough for about 30 mini buns. Also makes a nice do-it-yourself served with variety crackers
