We are getting to the time of year when lemons should get to a good price. Here is a way to buy them when they are and have the juice and zest when we need it at a lower price!
Purchase a couple bags of lemons (depends on how much you use in your cooking). Wash each lemon and microwave it 20 to 40 seconds to get the most juice.
Using a zester or a grater remove the zest from all the lemons. Freeze it in a plastic freezer bag.
Squeeze the juice from all the lemons and pour it into ice cube trays and freeze. When frozen, transfer the cubes to a plastic freezer bag. Each cube should be about 1 tablespoon.
