View Full Version : Tami's Crockpot Chicken "Stew"

I made this again tonight for dinner. I made it last week and my DH loved it. :)


I used my 5 qt. crockpot and layered:

first layer : cubed red potatoes (about 1/3 or a little more up the pot)

second layer: 1 smal bag of baby carrots + one small can of mushrooms ( would've used 2 but only had 1) ;)

On top of this I poured one can of cream of chicken soup and a sprinkle of poultry seasoning.

Third layer: 5 frozen chicken breasts

On top: 1 more can of cream of chicken soup and another sprinkle of poultry seasoning

I cooked this on high for 3 hours and then removed the chicken and sort of stirred the potatoes and carrots. Add chicken and cover again for 2 more hours.

Keep an eye on the last hour of cooking because it will depend on the size of your chicken breasts for how long it will take to cook.


I cubed the chicken the first time and served it in bowls, hence the "stew" name. I'm just serving it on a plate tonight as chicken breasts with veggies.

This is a basic "throw whatever you have on hand" into the pot kind of meal.

What changes would you need to make to it? I really couldn't think of anything that you couldn't change to really mess up the recipe. :)

I'd mostly just need to find somethign else that would be good to use n place of the potatoes. I try not to eat many potatoes because they cause my sugar to spike. There has to be something else that would be good in place of the potatoes and is lower in carbs. Although red potatoes cause less of a glucose spike so I may try it this way, anyway, and see what sort of readings I get. It sounds delicious and I love crockpot recipes!

Couldn't you use brown rice as the potato replacement? Brown rice is low in carbohydrates when compared to potatoes.

Do you like turnips? When I was LCing, I would oocasionally dice turnips and cook in place of potatoes. After not eating potatoes for such a long time, they were a nice substitute. (You can fry them like potatoes too :))

Another idea would be to add other veggies in place of potatoes. Frozen green beans or even fresh green beans would work, asparagus too.

I should've mentioned that I used red potatoes the first time and Idaho the second time. I prefer the red ones in this meal.


Does eating carrots affect your glucose levels too since they are high in sugar? I had to watch eating carrots too or I would plateau--which was never worth a darn carrot because it was so hard to start losing again! :(

turnips would be a good idea. so far carrots dont seem to cause me a problem. its more the total carbs rather than the amount of sugars. and natural sugars arent as bothersome as processed.

Thanks for the ideas. I do like tunrips and made fried potatoes out of them once. I doubt the rest of the family would eat them though LOL

Dh loves turnips, but only boiled or steamed and then eats them plain,ugh! I only eat turnips in stew or veggie soup. I've tried fixing them other ways for him, but he always wants them just plain!
