Had this for supper tonight and we both enjoyed it; it smells wonderful cooking! This is a vegetarian main dish
1 1/2 cups dry yellow split peas
6 cups water
1 medium tomato, chopped
1 medium onion, chopped
2 cloves garlic ,minced
1/4 cup fresh parsley, chopped
1 tsp dried dillweed
2 cups peeled & cubed sweet potatoes
2 cups broccoli florets
Soak peas in 4 cups water for 4 hours. In a medium saucepan, bring them and the soaking water to a boil. Add tomatoes. Simmer, covered till the peas are very soft, 20 to 25 mnutes. At this point you can puree 2 cups of the pea mixture in a food processor or not. If you do return this mixture to the saucepan and cover. In a deep pot combine onion,garlic, parsley, dill, sweet potatoes and remaining 2 cups water. Bring to a boil and lower heat and simmer 6-7 minutes. Add the broccoli anmd simmer till the broccoli is tender crisp about 6-8 minutes. Add pea mixture. Lower the heat and cover and cook gently till heated through.
