The "key" to this is the shredding of the carrot. A typical shredder produces too coarse of a shred so you need to use a shredder that will produce a very fine shred; such as one you would use to finely shred Parmesan cheese.
1/3 cup mayonnaise
2 tsp lemon juice
2 tbsp granulated sugar
2 tbsp crushed pineapple
4 cups finely shredded carrots
1/3 cup raisins
Whisk together first three ingredients till sugar is dissolved. Whisk in crushed pineapple. Fold in shredded carrots and raisins. Cover and chill overnihgt for flavors to blend. Makes 8 small servings
