These are really tasty and they reheat well!
Breakfast In A Cup (Low Carb) Recipe
Serving Size: 4
-= Ingredients =-
4 eggs
4 slices of bacon
1/2 lb. loose sausage
grated ; cheddar cheese
-= Instructions =-
Preheat oven to 350°F. Spray a muffin tin with non-stick spray. Line bottom of four muffin cups with loose sausage so that it covers the bottom of each one and pat down. Wrap bacon around inside "wall" of each cup. Crack an egg in each one. Bake approx 20 minutes until you see bacon is done. Sprinkle cheese on top of each one and bake until cheese is melted.

As soon as I get up and get myself together, I am going to the store to get the ingredients for this! Sounds like a good recipe for busy school days! Thanks for the recipe.

Hopefully you will find this simple and easy to cook ahead for busy days. If you want the sausage brown you will want to pre cook it before you put it in the pan. I didn't do that with mine and it was still very good.
I used egg beaters instead of whole eggs and it took mine about 26 minutes to get done.
I will definitely make this again!

Yummy, when you cook these, does the bacon get crisp or is it soggy? My little muffin pan that I have for this RV is silcone. If the bacon will be more soggy, I am thinking about frying the bacon first and then sprinkling the fried bits to the egg, before I add the cheese.

I assume you may have tried this already and I am just now getting back to the boards. Hope Im not too late in answering this.
I used turkey bacon in mine and it was not crunchy but not soggy either. I have not tried it with real bacon so you will need to experiment with that. Perhaps do a few with the strips and the rest with crumbled and see how it goes. Let us know how it turns out and which you like better.
Also, I was thinking, this might be great with some other goodies added like cooked mushrooms, diced peppers and/or onions to make a muffin omelette variation.

Yummy, those were terrific! I used regular sausage and regular bacon. I did not break my yolks and they turned out a bit soft and underdone, which I LOVE. I added jalapenos to mine, but nest time, I will probably add onions and peppers as well. I think that they would make a good lunch or brunch as well. Next time, I may try different cheeses. Thanks for sharing! It was a wonderful treat this morning.

I put the bacon in as directed. It turned out perfectly. I didn't want to do too much experimenting until I made them once first. lol

Yes I felt the same when I made it the first time. LOL. I am glad to hear the regular bacon turned out fine when made as directed. I may need to make them sometime with regular bacon for the others in the family who don't like turkey bacon

One piece of advice though. I placed a liner of foil under my pan to catch any bacon drippings. I am glad I did or there would be grease in my oven.

Thanks for the tip. I didnt do that since Turkey Bacon has much less grease but thanks for reminding me for next time, because I surely wouldnt have thought of that!

So the hot grease didn't do anything to the silicone pan? I have one that Ihave used a couple of times, but always seem to grab my regular ones to use and the grease is one I have wondered about using them for. I have a recipe for muffin pan meatloaves and wonder how those would cook in it?

I did not use the siligone pan for this recipe because the cups are way too small. My metal pan barely fits in my oven in the RV. I have baked muffins in the silicone and it was fine, but it would be interesting to see what hot grease would do to it. I feel like I am baking in rubber. lol

I've never used a silicone pan, before. I'd be afraid to do somethign greasy in it, I think

That's what I was wondering; the silicone pan with the bacon fat! The couple times I've used mine it was fine for muffins,but I was scared to death the first time I put it in the oven! :eek: LOL

I have heard that silcone can withstand temperatures of up to 900 degrees F. However, I have not tested it. If I ever do, I will let you know.
