3 lbs. peaches
1 pkg powdered fruit pectin
2 tbsp lemon juice
5 1/2 cups sugar
1 tsp real butter, not margarine
1 tbsp Amaretto
1/4 cup finely chopped pecans
Peel, pit and grind peaches to measure 4 cups. In a large pot combine peaches, pectin and lemon juice. Bring to a full rolling boil, stirring constantly. Stir in sugar, return to a full rolling boil. Continue this for 1 minute. Remove from heat, skim foam with metal spoon. Quickly stir in butter, amaretto, and pecans. Ladle into clean, hot half pint jars to 1/2" from top. Wipe rims, adjust lids. Process in water bath 15 minutes.
