Some of my garden is ready!!!!!!!!
When I make salsa, using cilantro, do I use the stalks of the cilantro or just the leaves? I'll post the recipe, its really simple, later.

I usually only use the fresh young leaves of cilantro, does anybody else do it different?

Well, I ended up using a little of both because it was pretty hard to avoid all the stalks -- I have to say it was pretty labour intensive laying all the leaves the same way and then cutting it up. Next time I won't swish it in the sink to clean it, I'll just rinse it still in the bunch!

Let us know how it turned out using some stems too! I guess maybe the smaller ones at the top with the leaves wouldn't be to tough?

When I make Pico de Gallo, I cut the leaves of the cilantro with my kitchen shears along with the tender stem directly below the leaf and toss the rest. I don't notice a different in taste or texture. Maybe because of all the Jalapenos:eek:

Yes, the salsa was good (not great, but I have to climatize myself to the peculiar taste of cilantro), there was so little stem that I couldn't tell the difference. I was kind of expecting cilantro to make it taste like store bought salsa. I put it on a bagel with melted cheese. I've also not spent a lot of time eating raw onions, so that takes some getting used to as well. I don't think I'll make it again, I'm going to go for the more traditional type of salsa next recipe. And I'm going to look up Pica de galo from the post above me -- I don't know what it is!

Joanne, I don't use cilantro when I make pico de gallo and everyone raves over it. I omit the cilantra since so many don't like it.

Its nice to know that it turned out fine using the stems. I eventually want to try making some salsa one day. I have tons of recipes for it

Cat, I have never measured anything when I make mine. I usually take and dice several tomatoes and onions. I use about a 5 to 1 or 6 to 1 ratio of tomatoes to onions. Put in enough cilantro to flavor, but you can also leave it out. As for the jalapenos, you de-seed and finely dice them as well. How many you use depends on how spicy you want it. Of course, salt your pico de gallo to your tastes. When I make mine, I make it with what Bruce has in his garden plus the jalapenos I get from the store. Also, you will want to refridgerate for a few hours so the flavors will marry.

Cilantro has a strong taste & you either like it or U dont. Or it takes some getting used to. Try using less of it in your recipes.

The more I have let the salsa sit, the better and milder it has tasted. Now I have got to wait for more tomatoes to ripen.

I like to use only the leaves of cilantro in my salsa, I too only like fresh salsa, I also put colored peppers, sweet onion and hot peppers in mine too...

I eat salsa on everything..well almost everything...eggs, potatoes, salad, and I now dip veggies in salsa...since I am trying not to eat alot of the wonderful, delicious, tortilla chips..lol

Do you any special flavor that you like or just all of them? LOL I like one I get at walmart; White Corn and Black Bean Salsa!
