View Full Version : Cream of Celery Soup

When I was getting something out of the pantry I noticed that I have 2 cans of cream of celery soup. That is NOT something I would ever buy. I do buy cream of chicken, and cream of mushroom, to use in certain casseroles. I probably grabbed the wrong cans off the store shelf.

Before I just put those cans in the bag for the food pantry, is there something I can use these in? Is it a strong flavor of celery? Any way I can "disguise" it?

You really will not even tell it is cream of celery soup in a recipe, you can use it in any almost that you would use cream of mushroom, or cream of chicken soup. I'll go through my recipe file of our favorites because I think I have one recipe that actually calls for it, but for the life of me I'm blank at this moment. I'll post it here as soon as I find it and it may even be more than one.

Sorry for the back to back, but here is the one I was thinking of:

Chicken & Dressing Casserole

1 - 1 1/2 lbs. chicken, cooked and cut into bite size pieces
1 can cream of mushroom soup
1 can cream of celery soup
2 cups fat free chicken broth
1 pkg. (10 oz) cranberry & Herb stuffing mix

Mix soups and broth and add chicken to the mixture. Combine chicken mixture with the dry stuffing mix. Place in a 2 - 2 1/2 qt. casserole that has been sprayed with nonstick cooking spray and bake at 350 degrees for 30 minutes. Serves 6

Yep it sure does! Here's another one I found I had; I'm sure there are more, but just haven't found all the ones I especially use it in yet.

Turkey Macaroni Bake

2 cups cubed cooked turkey
1 1/2 cups uncooked elbow macaroni
2 cups shredded cheddar cheese,divises
1 can (10 3/4 oz) condensed cream of celery soup, undiluted
1 cup milk
1 can (8 oz) mushroom stems & pieces, drained
1/4 tsp pepper

In a large bowl combine turkey, macaroni, 1 1/2 cups cheese. soup, milk, mushrooms and pepper. Pour into greased 2 qt. casserole. Cover and bake at 350 degrees 60- 65 minutes or till macaroni is tender. Uncover and sprinkle with remaining cheese. Bake 5-10 more minutes or till cheese is melted. 6 servings

This is one we used to love, but because the meat isn't cooked before it is added DH can't have it much any longer on his low fat/no fat diet. But it is really good if you aren't having to watch the fat that close!

Ground Beef ad Stuffing Casserole

1 cup chopped celery
1/2 cup chopped onion
2 tbsp margarine
5 cups bread cubes
1 tsp rubbed sage
1/4 tsp pepper
1/4 tsp ground nutmeg
1 ( 10 1/2 oz) can condensed cream of celery soup
1 cup milk
2 lbs lean ground round
1 tbsp prepared mustard
2 tsp worcestershire sauce
1 (10 1/2 oz) can cream of mushroom soup

Saute celery and onion in melted margarine in skillet till tender. Combine bread cubes, sage, pepper, nutmeg, cream of celery soup, milk, and sauteed vegetables and mix well. Combine bread mixture with ground round, mustard and worcestershire sauce; mix lightly but well. Press mixture into a geased 13 x 9 x 2" pan. Stir remaining mushroom soup till smooth. Spoon over meat mixture and bake at 375 degrees 1 hour or till done. Cool 10 minutes and cut into squares. Makes 8 servings

Here is a recipe my DH asks for OFTEN:

1 lb fish fillets (Talapia, Cod, Haddock, or your favorite)
Generous dash of pepper (I use Lemon Pepper)
1 can Condensed Cream of Celery Soup (I add Cream Sherry to thin it out a little...seems to add just the right 'extra' flavor!)
1/2 - 1 Cup Shredded Mozzarella Cheese (or your favorite 'mild' cheese...add more or less to taste)
Generous dash of Paprika

Arrange fillets in single layer in shallow baking dish (10x6x2); sprinkle with Lemon Pepper or Pepper. Bake at 350 degrees for 15 minutes. Pour Soup over fish, stirring into liquid around the fish). Put a layer of shredded cheese over the top, then sprinkle generously with Paprika. Bake another 10-15 minutes until done. Serve over white rice and garnish with parsley or lemon if desired. 3 Servings.

My DH loves lots of sauce, so I usually end up using two cans of Cream of Celery soup, then serve the fish next to a pile of white rice with sauce generously distributed over all. Even my 3 year old thinks it's yummy! :D
