This pie doesn't use any pie crust to lower the calories and fat. You can use a chocolate crumb crust prepared if you wish to pour the chilled mixture in to a 9" crust.
3 oz pkg. sugar free lime flavored gelatin
2/3 cup boiling water
1/2 cup cold water
ice cubes
2 tsp peppermint extract
2 tsp chocolate extract
3 1/2 cups Cool Whip, thawed
Completely dissolve gelatin in boiling water. Combine water and ice to make
1 1/4 cups. Add to gelatin and stir till slightly thickened. Remove any un-melted ice. Fold extracts into whipped topping. Use wire whisk to blend whipped topping into gelatin. Whip until smooth. Chill until mixture mounds. Spoon into 9" pie pan.. Chill for about 2 hours.
