1 teaspoon unflavored gelatin
1/3 cup peach nectar or apricot nectar
2 6 or 8 oz cartons vanilla or peach fat free yogurt with sweetener
1/3 of a 26oz jar refrigerated mango slices, drained OR one 8 oz can peach slices, drained

In a small saucepan combine the unflavored gelatin and peach or apricot nectar. Let stand for 5 minutes. Cook and stir over medium heat until gelatin is dissolved. In a blender container combine gelatin mixture, yogurt, and drained mango or peach slices. Cover and blend until smooth. Spoon mixture into eight 3-ounce paper cups. Cover each cup with foil. Cut a small slit in the center of each foil cover and insert a rounded wooden stick into each. Freeze pops for 4 to 6 hours or until firm. To serve, remove the foil and tear paper cups away from pops. Makes 8 pops.

Here's another version I tried and I liked it a lot better than the first recipe; this one came from BH&G magazine

2 medium ripe mangos, seeded & peeled
1/2 cup water
1/4 cup sugar
1/4 cup lemon juice
3 6oz cartons vanilla fat free yogurt

In a blender combine first 4 ingredients and blend till smooth. Add yogurt and blend till combined. Transfer mixture to a 13 x 9 dish; cover and freeze about 3 hours; stirring 2 or 3 times till edges are firm but center is slightly soft. Scrape mixture into a large CHILLED mixing bowl. Beat with electric mixer till smooth and pour into popsicle molds. Freeze overnight. Makes about 12 popsicles depending on the size of your containers.
