4 medium baked potatoes
1 cup nonfat cottage cheese
1/4 cup skim milk
2 tbsp chopped green onions
1/2 tsp paprika
1/2 tsp black pepper
1/4 cup grated nonfat cheese

Preheat oven to 400 degrees. Pierce potatoes with a fork and bake for 1 hour. Cool for 10 minutes. Cut potatoes in half. Scoop out pulp, leaving a
1/4" shell, and place in a medium bowl. Mash the pulp with a fork or potato masher. Place cottage cheese and milk in a blender and whirl till smooth. Add blended cottage cheese, green onions, paprika, black pepper and cheese to potatoes and mix well. Stuff potato shells with mixture. Bake at 400 degrees for 10 minutes. Makes 4 servings.
