I don't think I'll have anything special. It is the day before school starts, so I might just cook out some hamgurgers.

Nothing to special but will grill weather permitting. hamburgers, hotdogs potato salad coleslaw maybe banana split cake for dessert.

I love Banana Split cake, my mom used to make that for our family picnics when I was younger.

Anyone have a recipe for Banana Split Cake?

Mine isn't really a cake so to say, but it has a crust and is good!


Banana Split Dessert

1/4 cup sugar
13/ cup melted butter
1 1/4 cups graham cracker crumbs
6 bananas
16 oz cream cheese
2 cups confectioners sugar
1 tsp vanilla extract
1 20 oz can crushed pineapple with heavy syrup
1/3 cup milk
16 oz Cool Whip, thawed
Chocoalte syrup
1/2 cup chopped nuts
Maraschino cherries

To make crust, mix sugar, butter, and crumbs and press firmly into bottom of a 9x13" dish. Do not bake. Set aside.
To make filling: drain pineapple(save juice); cut banana in half lengthwise. Soak bananas in pineapple juice. In medium bowl mix cream cheese, confectioners sugar, milk, and vanilla till smooth. Pour over graham cracker rust. Put pineapple over mixture; place bananas cut side down over pineapple. For topping, spread Cool Whip over top. Drizzle with chocolate syrup, nuts, and cherries. Serves 12

Here's my version:
Banana Split Cake
(from Weight Watchers)
1 box yellow cake mix
1 12 oz. can diet sprite
1 egg
1 large banana peeled and sliced thin
1/2 cup strawberries sliced thin
1c. 1% milk
1 c. instant sugar free fat free vanillia pudding
1 tub fat free coolwhip
4TB. Light hersheys syrup
in a large mixing bowl mix the cake mix egg & diet sprite. Bake as directed
in a small mixing bowl mix the milk and pudding mix let set up in the fridge for a few mins. then fold into cool whip.
Let cake cool then spread the pineapple & bananas on top.
"Ice" the cake with the coolwhip/pudding mixture
Lay slices of strawberries on top and drizzle with the chocolate syrup.

we won't be doing anything special. dh and I will be working. If my sil has off he and my dd might do something with the kids-I hope so anyway.

Not sure of work schedule yet but, if we have a cookout the menu will most likely be

BBQ ribs
potatoe salad
baked beans
homemad ice cream

DH and DS have both been asking for homemade ice cream already this year. They love it!

Both recipes for the Banana Split Cake sound yummy!

Well the Holiday Celebration is this weekend, care to share all those recipes now so everyone can make that last big grocery shopping list?

We will have:

Boca Burgers on the grilll
Chicken Breast

Potatoes cooked in foil (potatoes, onions, rosemary, mararine, coarse grind black pepper)
Grilled zuchini & yellow squash
Baked Beans (recipe follows)

Homemade Coleslaw
Sliced Cucumbers,Onions, & Tomatoes

Homemade Ice Cream

Debbie's Baked Beans This makes a lot!

9 cups Northern Beans
12 oz chili sauce
2 onions, sliced
1/2 cup packed brown sugar
3 cups water
1/2 cyup dark molasses
1 tsp dry mustard

Rinse beans and boil in water 5 minutes, then let sit off heat 1 hour. Combine all ingredients in large roasting pan and bake at 250 degrees till tender, adding more water if they get too dry during baking. I usually cook these a minimum of 5-6 hours.

I am hoping to get DH to smoke a brisket for me this weekend. I go back to school on Tuesday and I really miss that. I haven't decided what to do yet, but I am thinking along the likes of BBQ. Guess I have to plan.

Smoked Brisket sounds good. One of my BIL has a smoker and he does a great job on smoking a brisket; really good and tasty! Hope you talk DH into it!

I think it will be pretty easy. I'm originally from Texas and we live on it there. I'm about to leave for college and DH will want to treat me--I'm sure! ;)

Your menu sounds so good. I love ribs, but DH can't at them any longer. My son came out the other day and I cooked some country ribs so I could have them. I like to make a bunch when I cook them and it is way to much for just me! LOL Wish I could "drop in" and have a bite!

It has been so long since I had ribs. They are so good!

I forgot to make my Texas BBQ sauce for my brisket. It requires beer and I am not a beer drinker. I find it almost impossible to find a single, small can of beer at the convenience store. I end up thowing most of it out. Anyway, I'll have to get that when I got out.

Maple Sweet Potato Salad

1-1/2 lbs. sweet potatoes, peeled and cut into 1/2" cubes
3 tbsp maple syrup
2 tbsp orange juice
2 tbsp lemon juice
3 tbsp olive oil

Place sweet potatoes in a steamer basket over boiling water. Cover saucepan and steam 8 to10 minutes till tender. Transfer sweet potatoes to a large baking sheet. Spread out to cool. Combine next 4 ingredients in a jar with a tight fitting lid. Season with salt and pepper to taste. Shake vigorously. Place sweet potatoes in a serving bowl. Add maple dressing and remaining ingredients. Toss. Cover and chill until ready to serve. Serves 4
