ANother way to use some of that zucchini!

1 tsp salt
1 tsp baking powder
1/2 tsp baking soda
2 1/2 cups cornmeal
1 to 2 tbsp honey
4 egg whites
2 tbsp vegetable oil
2 cups buttermilk
1 cup grated zucchini

Grease muffin tin. Preheat oven to 425 degrees. Sift the salt, baking powder and soda together and combine with cornmeal. Mix honey, eggs, oil, buttermilk and zucchini and add to cornmeal. Stir just till smooth. Divide batter among muffin cups and bake 15 minutes. Batter looks very thin but works fine.
