I bought some fresh peaches last week and already they are starting to get a little wrinkly.
I hate to throw them out if there is SOME way I can use this fruit. Obviously we won't eat it out of hand, as usual. I have about 4 peaches here.

Cut then up and make a peach smoothie, a small cobbler, or a couple of baked peach turnovers! I hate to throw out fruit; my boys always knew when something fruit wise was going to bad to eat out of hand because all these fruit dishes started happening! LOL If you need a recipe let me know!

Here's a quick way to use those over ripe peaches!

Peach Cobbler


seven small to medium ripe peaches, peeled, pitted and diced
1/2 cup sugar
1 tsp ginger
2 tbsp cornstarch
1 18oz cake mix, yellow or your choice
1 cup butter, melted

Preheat oven to 350 degrees. Lightly grease 9 x 13 pan. In a medium saucepan, combine peaches, sugar, ginger and cornstarch. Bring to a boil and cook for 1 minute. Remove from stove. Pour peach mixture into prepared pan.
If you only have 3 peaches, half the recipe by using a single layer cake mix and half of the other ingredients.

But what do you do with the cake mix and butter?
Do you prepare the cake mix as directed on the box?

Whoops!!! Sorry; didn't type that part! Here is the following the the above Peach Cobbler recipe!

Sprinkle cake mix over top. Drizzle butter over the cake mix. Bake for 1 hour or until top is lightly browned and peaches are bubbling. Serve with whipped or ice cream.
