View Full Version : Cherry Cobbler for Diabetics

Does anyone have a recipe for cherry cobbler that is diabetic friendly or can easily be converted to be diabetic friendly?
I have some cherries I want to use to make a cobbler using my carbquick if possible. I figured if I could find a good recipe, I can perphaps subsitute carbquik for the flour and splenda for the sugar.
Every one I have found so far doesnt look convertable. (Wow thats a weird word for this context, huh?!)
So I was hoping one of you may have some cobbler recipes I could adapt to my diet. :o

Yummy, I wish I had the recipe for you. My DH LOVES cherry pie and I am sure he would love cherry cobbler. I am not allowed to have much sugar, so this would be a nice find!

Here is one I found, I haven't made this one, but it sounds good. I would think you could use cornstarch in place of the arrowroot powder and water for the cherry liquid if you are using fresh cherries.
Diabetic Cherry Cobbler
2 cups Tart Cherries, Canned,water pack
1/4 teaspoon fresh Lemon Juice
1/8 teaspoon almond Extract
1/2 teaspoon Arrowroot Powder
1/2 Cup Flour, sifted
1/8 teaspoon salt, optional
3/4 teaspoon baking Powder
1 Tablespoon Diet Margarine
1/4 Cup Egg Beaters Egg Substitute
2 tablespoons Skim Milk
1/4 Cup Splenda Granular
Preheat the oven to 425 degrees. Drain cherries, reserving 2/3 cup of liquid, and place the cherries in a shallow cake pan.In a small mixing bowl, combine the lemon juice, almond extract, arrowroot and drained cherry liquid; mix well. Spoon over the cherries.In a mixing bowl, combine the flour, salt, and baking powder. Mix thoroughly. Cut in margarine until coarse; add egg, milk, and sugar substitute, mixing well.Spoon mixture over cherries and bake for 25 to 30 minutes or until crust is golden brown. 4 servings.

I wonder if i could do this with carbquik instead of flour. Or I could wait till I get back form vacation and order some of that special Carbalose flour to use. I really want a cobbler and there are some other recipes I need that Carbalose flour for, also.

Instead of mixing the flour,salt, and baking powder together and cutting in the margarine,egg, milk and sugar substitute; just make your "dough" out of your carbquick product. I guess there are recipes on it similiar to the bisquick bos, if not follow the bisquick box directions for drop biscuits and use it substituting your carbquick.

Are you talking about the Dough part? I've used the regualr bisquick so I don't know about the carbquick, but the cherry part is really good and of course the bisquick part is too!

I wanted to make a cobbler so bad! And I didnt have any arrowroot or cornstarch in the house, so I tried this one: (Except I used carbquik in place of their low carb bake mix, and i used cherries instead of blueberries)
Low Carb Bake Mix (makes 3 1/3 cups at about 10 carbs per cup)
1 2/3 cup almond flour (http://www.netrition.com/cgi/goto.cgi?aid=281&url=bobs_red_mill_almond_flour_page.html)
2/3 cup vanilla whey protein powder
2/3 cup vital wheat gluten (http://www.netrition.com/cgi/goto.cgi?aid=281&url=now_gluten_flour_page.html)
Okay, so now that we have our Bake Mix...
First we need to cook the blueberries. So mix:
3 cups blueberries
1/2 cup Splenda (http://www.netrition.com/cgi/product_categories_display.cgi?categories=SWEET,SU CR)
1/4 cup of butter
in a skillet and cook for a few minutes until the berries are all hot and bubbly, pour into your sprayed pan (I used a 1 inch high tart pan)
Now, time for the cobbler. What I did next is based on a recipe out of my Better Homes and Gardens Cookbook...
Combine:
1 cup of Low Carb Bake Mix
2 T Splenda
1 1/4 tsp baking powder
1/4 tsp salt
Cut in 1/4 cup of butter into the flour mixture with a pastry cutter or fork until it resembles crumbs. In a small bowl mix:
1 egg
1/4 cup Carb Countdown milk or a mixture of cream and water
Add the egg mixture to the flour mixture and mix until moistened. Drop spoonfuls of the cobbler topping onto berries. I'd try to make about 5 or 6.
Bake at 400 degrees for about 15-18 minutes or until golden. Serve with lc vanilla ice cream or whipped cream. Enjoy!

You can also use some tapioca as a thickener if you have that around, I usually keep the quick cooking kind in a jar for thickening for fruit pies rather than the pearl tapioca as it takes longer cooking times. Hope your cobbler turned out well!

Ooops sorry I thought I posted how it turned out. LOL I was up for 33 hours without sleep when I typed that. I guess I only thought I mentioned it!
The cobbler was wonderful! I added a little of the cherry juice in with the butter and splenda and a tiny bit of flour to thicken it since I had no other thickening agents in the house. It was awesome! The cobbler was small so it didnt last long but it was a delicious experiement and I would defintely make it again! Even the non diabetics loved it!
