4 slices toast
2 large cloves garlic
2 or 3 ripe tomatoes, sliced thick
4 extra large eggs
salt and pepper to taste
olive oil for frying
Lightly grill the tomato slices then keep warm. Rub the garlic onto the toast, the more you like garlic the more you rub.Fry the eggs in olive oil. To assemble cover each slice of garlic toast with grilled tomato.Season with salt and pepper.Top with the fried egg and serve immediately. Makes 4 servings
