4 cups heavy cream
2 cups milk
1 1/2 cups granulated sugar, divided
1 tsp ground cinnamon
12 large egg yolks
Combine cream, milk, 1 cup of sugar and cinnamon in a heavy saucepan. Place over medium heat. In a separate bowl, combine egg yolk and remaining 1/2 cup of sugar. Bring cream to boil, then quickly whisk it into the yolk and sugar mixture. Strain through a fine-mesh sieve and cool in an ice water bath. Turn into ice cream freezer, freeze and ripen following the manufacturer's instructions.
