4 cups potatoes, diced
4 cups water
1 medium white onion
1/2 tsp salt
3 cups skim milk
1 tbsp butter
1 can of cheddar cheese soup
Two 1/2" slices of velveeta cheese
Dash of pepper
1 small can of sliced mushrooms
6 slices bacon
Dice the potatoes, chop the onion and put in a large saucepan with the water and salt. Boil till tender and remove from heat. DO NOT drain the liquid. Add cheddar cheese soup, cheese slices, milk, butter, pepper and mushrooms. Cook until desired thickness. While the potatoes are boiling, fry the bacon and drain on paper towel, crumble and place in with potatoes and cheese. Makes 8 servings
