2 cups old fashioned oats
1 cup whole wheat flour
1 cup dried fruit or raisins
3/4 cup brown sugar
1/2 cup wheat germ
3/4 tsp cinnamon
3/4 tsp salt
1/2 cup vegetable oil
1/2 cup corn syrup
2 tsp vanilla
1 egg
Mix dry ingredients, then add wet. Pour into non-stick foil lined 9x13 pan. bake at 350 for 25 minutes. Cool, invert pan and peel away foil. Cut into bars.

I was looking for a sub for the oil too, inspired by you...I found that you can substitute 1 cup of "fruit puree" for one cup of oil -- wondering if I could use banana puree, or does it have to be more liquidy? Did you try your recipe with applesauce yet? I hate to have something not turn out -- hmmmm -- I'm wimping out until you try it first! ;)

Usually fruit puree is referring to Prune puree which I use all the time, I usually use strained baby food prunes and even the strained plums works! I substitute natural unsweetened applesauce for oil in losts of recipes that is why I'm going to try it in this,but haven't made it yet. My DH is on an extrememly low fat diet so we do a lot of weird things! LOL

Ok....I made the granola bars today with applesauce (that I made myself) and I was a little disappointed. The taste is ok, but the texture is wrong (for me, I know its personal thing), so I thought I would warn you. They are very chewy and tough, but your expectations might be different since you haven't had them with the oil yet anyway.

It does cahnge the texture in some things, but DH is on such a strict No fat almost diet I have to substitute or he can't ast it all so we have learned to adjust. And like you siad we never had them the other way! LOL No problem, but thanks; I'll still make them though.
