BASIC MEATBALLS
6 eggs
6 cups soft bread crumbs
1-1/2 cups water
1 cup finely chopped onion
1 tablespoon salt
1/4 teaspoon pepper
6 pounds ground beef
In large bowl combine first 6 ingredients. Add beef, mix well. Shape into 12 dozen 1-inch meatballs. Place in shallow baking pan. Bake at 425 degrees for 15 minutes. Pack loosely into hot jars, leaving 1-inch headspace. Add boiling water or meat juice, leaving 1-inch headspace. Adjust lids. Process in pressure canner at 10 pounds pressure, 75 minutes for pints, 90 minutes for quarts.
Makes 8 pints.
REMEMBER THE ALTITUDE ADJUSTMENT IF NECESSARY!
