Lemon-Herb Penne

Serves 6

If you are entertaining this summer and need a simple yet elegant pasta dish to serve your guests, this is the one. This dish takes as long to prepare as you cook your pasta. Simply wonderful.

Ingredients:
16 ounces Dreamfields Penne Rigate (one box)
2 tablespoons fresh thyme leaves
1 tablespoon chopped fresh chives
2 tablespoons butter, melted
2 tablespoons extra-virgin olive oil
1 teaspoon finely grated fresh lemon rind
2/3 cup finely grated Parmesan cheese
Salt and freshly ground black pepper, to taste
Sprigs of fresh thyme, chives and lemon wedges, for garnish
Directions:

Cook the pasta according to package directions.
Drain and return to the hot pot.
Toss in the thyme, chives, butter, oil, lemon rind, and half of the cheese.
Season to taste with salt and pepper.
Serve immediately with remaining cheese sprinkled on the top.
Garnish with the fresh herbs and lemon wedge.Nutritionals per serving:
