Spaghetti Carbonara

16 ounces Dreamfields Spaghetti (one box)
1 tablespoon olive oil
1 clove garlic minced
8 ounces sliced bacon, cut into 1-inch pieces
3 eggs
1/4 cup freshly grated Parmesan cheese
1/4 cup freshly grated Romano cheese
2 tablespoons chopped fresh parsley
1/4 teaspoon black pepper
Directions:


Cook pasta according to package directions.
In a 2-quart Dutch oven or sauce pan, heat olive oil over medium-high heat. Cook garlic and bacon for 5 minutes or until bacon is crisp; drain off fat.
Mix together eggs, Parmesan and Romano cheeses, parsley and pepper; set aside.
Drain spaghetti; immediately return to saucepan over low heat. Add egg mixture; quickly toss with spaghetti. Add bacon mixture; toss. Sprinkle with Parmesan cheese and cracked black pepper if desired.Nutritionals per serving:

**You MUST use Dreamfield's brand pasta in order for this to be lower carb

What is Dreamfields? Where can you buy it? How is it different than regular, high carb, spaghetti? Thanks.

DeBora, Dreamfield's is a special pasta for low carbers and diabetics with lots of extra fiber so that the digestible carbs are much lower than regular spaghetti. It is made out of a special process to keep the digestible carbs low. One serving of it without sauces or anythign is only 5 digestible carbs.

They make Dreamfields in 5 pasta shapes: Penne, Rotini, Lasagna noodlesm spaghetti, and linguini. Many major grocery chains carry it, as do many health food stores. It can also be bought directly from thier website or from www.netrition.com (http://www.netrition.com)

I have made it several different ways, for parties at work and at home. No one has been able to tell its not regular pasta.

If eaten in appropriate portions it does not cause glucose spikes in diabetics, as well.

If you want to try it and you cannot find it in your area, I can send you a box if you'd like. It is really very good and great for us low carbers who like pasta and cannot have it otherwise

Yummy, thank you! DH is about to run to the grocery store. I'll have him check to see if Albertson's has it. The cool thing about this is that if I cannot get it there, I can order it. I will let you know if I cannot get it here and I have trouble ordering it via the Internet. Thank you so very much!

Yummy, do you have the carb count on that spaghetti? I found some with 35 g carbs, 2.5 grams fiber per 2 oz serving.

I plan on making this tonnight as well.

I'd better get back to my work so I can though.

Pardon the back-to-back posts.

This is soooo good! Next time I will try it with spaghetti squash. I bet it tastes good with that too! Yum!

I don't have the spaghetti in my cupboard but I have the penne and the linguini, here.

So, did you find the dreamfield's pasta? it says right on the front 5 digestible carbs per serving.

I cannot get the Dreamfield's here. At the health food store I found a wealth of low-carb spaghetti though. Above I gave the total carb count for it. I would appreciate it if you post the count next time you buy some. Thanks!
