View Full Version : Brie and Mango Quesadillas

This is from Best of the Best California Cookbook


3 tbsp butter
1 mango, thinly sliced
1 small red onion, thinly sliced
1/3 to 1/2 lb. sliced Brie cheese
4 flour tortillas
cumin to taste
avocado for garnish
cilantro for garnish


Melt butter in a large skillet. Layer mango, red onion and brie on one half of one side of each tortilla. Fold over tortilla. Saute in pan till cheese is melted and tortilla is golden brown. Sprinkle outside of tortilla with cumin while browning. Garnish with avocado slices and cilantro. Cut tortilla into 4 to 6 slices. Serve warm. Makes 16 appetizer servings

This sounds interesting. Could you please describe flavors, since they are an odd combination. I am trying to imagine combining onion with mango as well as avacado with mango. Does the mango get to juicy while it is cooking?

Since the mango is in the tortilla it only combines with the onion by the brie getting soft and melting some. Don't let the brie get runny, jus soften. The tortilla won't be as browned , but I think the brie just softened is enough. Hey I love onions so anything (almost) with onions is good! The combination is just enough of the sweet, hot together. Hard to actually describe the flavor other than telling you if you like all the ingredients you'll love these! They are actually an appetizer, but they make a good lunch whole also.

The brie doesn't bother me because it's really good sweet or savory. One day when I am feeling adventurous, I will have to try this. I am thinking that if a person likes the Chinese sweet and sour stuff, maybe he or she would like this. I think that if you garnish with the avacado, it would mix with the mango though.

Also, I wonder if you browned the tortilla a little bit first?

I suppose you could brown the tortilla a little first; I don't mind it not being browned much with just the heat to "melt the brie a litttle.
