GREEN CHILE AND JACK CHICKEN
Serving Size: 4
-= Ingredients =-
1 tablespoon butter
1 tablespoon oil
2 cloves garlic ; mashed
4 boneless chicken breasts ; cut into chunks
1 cup chicken broth
4 ounce can green chiles
2 teaspoons mustard
1 cup heavy cream
4 ounces Monterey jack cheese ; shredded
Salt ; and pepper

Heat butter and oil in large skillet. Saute the chicken and garlic until lightly browned. Remove chicken from pan; drain fat and set aside. Add broth, chiles, mustard and cream to skillet. Simmer on medium to high heat until liquid is reduced and thickened. Return chicken to pan and heat through. Transfer to a greased baking pan. Top with cheese; broil to melt cheese.

I like this except for the mustard. I am not a fan of mustard. What would you suggest I use in its place?

Maybe horseradish?

I think horseradish would work. But I think it would work just as well if you just left the mustard out. Either would still be good, I think

Yummy, can you believe I dislike horseradish even more? lol I think I am going to make this tonight or tomorrow. I'll decide what to do, or not do with the mustard while it is cooking. lol Thanks!

LOL I'm not a horseradish fan, myself. I can tolerate mustard if it is in somethign cooked and a small amount. I think it would be good without the mustard though.
Let us know how it turns out if you make it.

My DS LOVES horseradish. I don't know where he gets it from because it was never in the house when the kids were growing up. lol But, he either brings his own or I buy some for him prior to him visiting us.
The last time he was at our house for Christmas I was making salads. I had all the regular stuff for salads out, including blue cheese. (He keeps his weird stuff, like horseradish, in one part of the fridge and I keep mine, like blue cheese, in another. lol) I am one of those who wait on everyone. Anyway, I asked him what he wanted on his salad. Tomatoes? Yeah. Onions? Yeah. Bell peppers? Yeah. Blue Cheese? Yeah. Ranch dressing? Yeah.
So, here we are, all eating our salads. Suddenly, my DS leaps up and starts gagging! I ask him what is wrong and he tells me that that blue cheese tastes terrible! I asked him why he had me put it in his salad if he didn't like it? He wasn't even paying attention to what I was saying! I could have asked him if he wanted boogers in his salad and he probably would have said, "Yeah." LOL Men! lol
I think we all have things we like that other find "gross" lol
I have been nausaueous all day. I am just now ablt to eat. It hit me during breakfast. DH took me out to breakfast and I felt ill right in the middle of it and have been ill ever since. That means that I won't be able to try this dish until tomorrow. But, I am definately making it and I will tell you how I like it.

Thank you. Since I am slowly starting to feel better, I am wondering if maybe I got a mild case of food poisoning. I had some
Got the "stuffs" to make it and will do so tomorrow. If I can get the black soy beans, I will also make the Fiesta Dip (http://www.momsmenu.com/forums/showthread.php?t=1092&goto=newpost) and let you know how that worked out. Also, DH got some jicama so I am going to try making some jicama chips to eat with it. Tomorrow evening we may be saying "Whoo Hoo" cool low carb chips for the dip or "De needs to learn to cook." lol

LOL I'm sure it will turn out great. Wow, you will be trying lots over the weekend! I can't wait to hear how they turn out. I Might make something new to tonight from the zucchini selection if my aunt has an zucchini ready to bring over when she comes to dinner tonight

It turned out great! I won't do as much cooking as I originally planned within the time I planned to. My LCD screen dyed so I spent all day on the phone with Dell setting up a way to repair it. Then, I went and got a rental computer to do school work on. That didn't include the other to-do's such as laundry, cooking, filling up and emptying tanks, and so on. I will let you know as soon as I try the others. It will take me days to catch up on posts! lol

Glad to hear that it turned out great! I really wanted to make it tonight too but I had somethign else originally planned. And I had a sneakign suspicion you wouldnt get to all the recipes this weekend, so I thought...
Hmm let me pick one that I could kinda use as a side thing..... So i picked one of the others and made it. I'll review it in that thread though.
I want to make this one soon, too, though!

I would have been able to make all the recipes I had planned IF I hadn't had sooo many catastrophes. I really enjoy baking during the weekends when I have a chance.
