Fiesta Dip
Ingredients:
8 ounces cream cheese, softened
1 cup shredded cheese (mixes like Colby-Jack work well)
4-ounce can diced green chilies
1/2 cup black soy beans, drained and mashed slightly
2/3 cup sour cream
1/4 teaspoon cayenne pepper
Directions:
Beat cream cheese in a large mixing bowl until smooth. Add shredded cheese, chilies, beans, sour cream and ground red pepper; mix well. Spoon into a small shallow oven-proof dish and bake at 350 degrees F for 20 minutes or until lightly browned around the edges. Serve with low-carb tortilla chips or sliced low-carb vegetables such as jicama, celery, bell peppers, etc.
Serves eight.
Per serving (dip only, 2 tablespoons):
3g carbohydrates; 1g fiber; 7g protein; 20g fat (11g saturated); 220 calories http://sheknows.com/graphics/ender.gif

Yummy, I am thinking about making this recipe this weekend. Do you buy the soy beans at a regular store or somewhere else.
I am going to look up the carb count on the soy beans as I am curious as to whether they might be good in a chilie. I like beans in my chili and havn't eaten any chilie since I went to low-carb. lol

You can buy the soy beans in some grocery stores if they have a healthy foods section.
You can also buy them at most health food stores that carry low carb products.
They are low carb and good in chili. The brand I bought, I think, was called Eden. They are a bit pricey, around $1.79 for the smaller can, but worth it when you can't have beans otherwise.

Yummy, you have been such a wonderful help! I know where a good health food store is as it is where I buy my local unpasturized honey. They might have some of the things that the regular store doesn't have. Tomorrow I will check the grocery store for both these soy beans as well as the Dreamfield's spaghetti for the Spaghetti Carbonara (http://www.momsmenu.com/forums/showthread.php?t=1105&goto=newpost). I cannot wait to try several of these recipes within the next few days. I'll start tomorrow. This makes doing low-carb pretty fun! :D

Always glad to help! I love trading recipes and ideas and things. Trying new things is fun and it makes this low carbing and diabetic diet thing fun for me, too.
I hope you will be able to find the soy beans and the Dreamfield pasta. The Dreamfield's is wonderful and I'd be lost without it.
They actually make real raw whole potatoes too that are significantly lower in carbs than regular potatoes, but they cannot be found anywhere around here so I have yet to try them. They can be ordered directly from the company though and DH and I are planning to try them eventually.

I didn't know about the potatoes. When I was about 20 and had severe blood sugar problems, potatoes seemed to bother me the most. I don't know why.
DH couldn't get the soy beans or the spaghetti. My last resort will be the local health food store.
I too love to share recipes that I have tried and enjoyed with others. I love to get recipes from others who have tried and enjoyed. That way, if I have any questions during cooking, I can ask. lol You can't get that from a cookbook, the Internet, or a magazine. They seem so cold if you want to ask questions. Plus, they are tried in a professional kitchen rather than for families in homes.

Oh yeah I really enjoy it here! I love to share recipes and try and help with any cooking problems if I can; and I've come across some really good recipes here too!

I never did get to make the fiesta dip, but after I worl in lab and IF Dell comes to get my computer, I will drive to Carlsbad and maybe I can make it there. Pray that they come! I'd like to see my GKs who are visiting Carlsbad.

I FINALLY made the Fiesta Dip and it is to die for! It is so very, very good. I will have to wait until I take the GKs back home before I can make the fried jimica chips.
I had the worst day! I had to call Dell as it was almost 3pm. They gave me the tracking humber for the DHL delivery. It showed it was due to arrive YESTERDAY. I called DHL and, get this, the delivery MAN came to my mobile home park, that has an office with a manager, and since he couldn't figure out which space mine was, he left! He didn't even ask the manager where I lived. I was so angry! :mad: I asked the lady why he couldn't ask the office manager which location I was in or try to call me as I stayed home all day waiting for that package and I even postponed my tried home to see my GKs because I was waiting on the package. She said it would be tomorrow before he could deliver the package. I told her I was on my way out to Carlsbad and he would HAVE to deliver it to the office. If she closes it to run errands, then he would have to come back that day and make sure it gets delivered BEFORE I come back. I think I had her in tears. Another woman called a few minutes later. I told her that same thing and made her promise to have that package in the office BEFORE Sunday night. I added that I have dealt with FedEx and UPS and this is the first time I have encountered problems and as a new compony giving up on a delivery when all the spaces are clearly marked and there is an onsite manager is poor business behavior.
Well, I'll step off my soapbox now. I am home and ended up dealing with Dell because my laptop wouldn't communicate with the PC moniter and the guy insisted on arguing with me. I told him it was not the motherboard as he thinks and it was not a bad monitor, so tell me how to make it work, else let me talk to someone who could help me. I had to hit 2 funky buttons at the same time in order to get it to work.
I cannot wait until I get this in the mail and back to working. My advice is to never buy a Dell and never use DHL.
Well, if I don't get back later tonight, I will be back after the GKs go home.

Well DeBora I sure your day got better! Sounds like what we went through at first with HP a year or so ago. Once we got ah old of a manager and someone that sould speak English it helped a lot! Sort of knopw what you went through.
I pijked up a jimica today and am going to make some dip to go with it tomorrow; oops it is tomnorrow! LOL Okay later today! Both my boys showed up here at 12:35 am with some friends, they are out looking for snakes!
