3 cups cooked mashed sweet potatoes
1/2 cup sugar
1 large egg
1 large egg white
1 (5-ounce) can evaporated skimmed milk
1 1/2 tsp vanilla extract
Praline Topping
1 cup light brown sugar
1/2 cup all-purpose flour
1/2 tsp ground cinnamon
6 tbsp margarine, melted
1 tsp vanilla extract
1/2 cup chopped pecans
Preheat oven to 350°F. Prepare topping:In a bowl, mix together the brown sugar, flour, and cinnamon. Stir in the margarine, vanilla, and pecans until crumbly. Set aside. In a mixing bowl, blend together the potatoes, sugar, egg, egg white, and vanilla. Place in a 2 quart casserole coated with nonstick cooking spray and cover with Praline Topping. Bake for 45 minutes. Makes 8 servings
