Caramel Apple Butter

3 lbs apples (http://www.recipezaar.com/library/getentry.zsp?id=186)
1/2 cup water (http://www.recipezaar.com/library/getentry.zsp?id=459) or apple juice
2 cups white sugar (http://www.recipezaar.com/library/getentry.zsp?id=139)
1/4 teaspoon ground ginger (http://www.recipezaar.com/library/getentry.zsp?id=166)
1/2 teaspoon ground cloves (http://www.recipezaar.com/library/getentry.zsp?id=325)
1 teaspoon cinnamon (http://www.recipezaar.com/library/getentry.zsp?id=324)

Peel, core and chop apples.
Add apples and water/applejuice into a large pot.
Over medium high heat cook apples until just tender.
Remove apples with a slotted spoon-puree using a food mill, food processor, whatever you have on hand. (discard fluid in pot).
Return puree to pot.
Add the sugar stirring well.
Return to medium high heat-you want mixture to bubble.
*Reduce heat and simmer, stirring frequently until butter is thick and has a spreadable consistency.
Add the ginger, cloves and cinnamon, stirring well.
Add the caramels.
Turn the heat up to medium low, stirring constantly until caramels are melted.
Ladle butter into clean hot jars leaving 1/2 inch head space. Seal.
Process in a boiling water bath canner 10 minutes for pints, 5 minutes for half pints.
*Using a frozen saucer place a spoonful of butter in center. If no rim of liquid forms, your butter is done.

We love apple butter! In fact around here in the fall there is a festival where they are making it in big copper kettles and they sell it!

Washington State Apple Butter


Apple butter isn't really "butter" at all, but more like a thick preserve. It makes a luscious spread on toast, muffins, crepes, and waffles.

Serving Size: 2 tablespoons
Ingredients
Name Measure Weight
Golden delicious apples, cored and cut into eighths --- 2 1/2 lb
lemon juice 2 Tbsp ---
ground cinnamon 3/4 tsp ---
ground cloves 1/8 tsp ---
ground mace 1/8 tsp ---
brown sugar 1 Tbsp ---
Preparation Instructions
1 Combine the apples, 3/4 cup water, and the lemon juice in a large nonstick pot. Bring to a boil over medium-high hear. Cover and simmer for 30 minutes. Drain.
2 Push the apples through a food mill or strainer to puree and remove skin. Return the applesauce to the pot of water; add the cinnamon,cloves,mace, and brown sugar. Simmer, uncovered, over low heat until the mixture thickens, about 45 to 60 minutes, stirring often.
3 Cover and refrigerate. Apple butter keeps in the refrigerator for 1 week. Freeze for longer storage.

if the brown sugar Splenda will work in it, then I can do this, thanks! I need to experiment and see if Splenda works in sauces and thigns withotu the taste altering it.
