Peanut Butter Bites
2 cups coconut
2 cups dried apples, peeled, cored and chopped
2/3 cup peanut butter
1 1/2 tablespoons vanilla
12 servings
In a large bowl, combine all ingredients; mix well.
Shape into 1/2-1" balls.
Dry at 135º for 4 to 5 hours, or until firm and crisp on the outside.
