Jalapeno Salsa
Makes 3 pints.
Preparation time 30 minutes
Cooking time 10 minutes
Processing time 15
2 pounds tomatoes, peeled and chopped, to measure 3 cups
7- ounce can dices jalapeno chilies or 12 fresh jalapeno chilies, finely
chopped seed removed.
1 onion peeled and chopped
6 cloves garlic
2 tablespoons finely chopped cilantro
2 teaspoons oregano
1 1/2 teaspoon kosher or pickling salt
1/2 teaspoon ground cumin
1 cup apple cider vinegar
Prepare jars, rings and lids for use, keeping jars and lids hot until you
are ready to fill.
Place all ingredients in a 5-6 qt sauce pan, bring to boil over high heat,
stir to combine. Reduce heat simmer, uncovered 10 minutes. Fill hot jars
with hot mixture, leaving 1/4 head space, I left 1 inch. Clean rims of jars
and put on lids, screw on bands hand tight, process filled jars 10 in BWB
from point of boiling. Remove jars, place on towel in an area away from
drafts and let cool. Once they cool test for seal. Reprocess or refrigerate
any jars that did not seal. They look so pretty, you can see the onion,
garlic and jalapeno.
