View Full Version : Skillet Chicken with Black Beans & Tomatoes

This recipe comes from the AARP magazine

Salsa
2 ripe tomatoes, seeded & diced
1 small bunch cilantro, minced
1 jalapeno, seeded 7 minced
1 clove garlic, minced
2 tbsp lime juice
salt & pepper to taste


Beans
2 tbsp oilve oil
2 cloves garlic, minced
1 samll onion, peeled & diced
1 16 oz can black beans, drained & rinsed
1/4 cup orange juice
1 1/2 tsp ground cumin
salt & pepper to taste

Chicken
4 8oz chicken breast
salt & pepper to taste
2 tbsp olive oil
2 limes, zested & juiced
2 tbsp sugar

To prepare Salsa
Combine all salsa ingredients and mix well, add salt & pepper to taste. Refrigerate at least 4 hours for flavors to blend.

To prepare Beans
Heat olive oil in a skillet add garlic and onion and saute about 3 minutes or till onion is transparent. Add the drained black beans, orange juice and cumin. Cook till liquid is mostly gone. Season with salt & pepper and set aside.

To prepare chicken
Season chicken with salt & pepper on both sdides. Heat olive oil in skillet and add the chicken breast and brown on both sides. Cover and continue cooking another 8 to 10 minutes or till chicken juices run clear. While chicken is cooking combine lime zest and juice and the sugar in a bowl and mix well. Once the chicken breast are cooked, add the lime juice mixture to the skillet. Cook 5 more minutes or till mixture becomes syrupy. Turn the breast to coat them with this mixture and remove them from the pan and set aside. Divide the beans among four plates and top with a chicken breast and garnish wih slasa.
