View Full Version : Jing’s fried eggplant

½ cup all purpose flour
3 eggs
1 large size eggplant or 2 regular Japanese size eggplants
1 pinch salt
1 pinch pepper
¼ cup diced red onion
1 sp diced garlic
½ cup vegetable oil or olive oil


Using a fork, press against the eggplant to make three tiny wholes unto the eggplant.
Microwave the eggplant for seven minutes or until the eggplant is soft. Let sit until cold then peel the outer skin. Throw the skin away. Mix flour, eggs, salt, and pepper in a medium size bowl then pour into the cook eggplant. Make sure the eggplant is not hot. Using a frying pan, add the oil then add the half (only if using two eggplants). of the diced onion and garlic into the frying stir until brown Add the eggplant into the hot frying pan with oil and brown on both sides. Served with white or fried rice.

This recipe is similar to egg fo young in a Chinese restaurant.

I just stated some eggplant seeds for the garden this year; hopefully they will do well and I can make this a lot!
