Chef Charged with Wine Snobbery!- I have been accused of being a "wine snob" on more than one occasion. In fact, I was belied as such twice in the last week. The first incident of incrimination occurred in a wine shop with my friend Mark. I was browsing through the Bordeaux when the clerk recommended a California Cabernet. I responded that I preferred Bordeaux, (which is French). Immediately Mark blurted out: "Wine snob."

Chuck Wagon- Nothing beats chuck for good ole fashioned comfort-classics like beef stew and pot roast. Pot roast is not roasted, it's braised, i.e., cooked partially submerged in liquid, at low heat for an extended period of time. Cod: British Gold- There are three species of cod, the Atlantic, the Pacific, and the Greenland. Highly propagative, they grow to as large as 100 lbs. It varies in color from grey to brown, has pronounced fins, a lighter underbelly, and an unmistakable barbel on its lower jaw. It is sold whole and filleted. It freezes well so frozen fillets are not a bad choice if fresh is not available.

Comfort Food- I suspect the average person doesn't think of Asian fare when they ponder the concept of comfort food. But as my indulgent example demonstrates, any food can be a comfort depending on the individual's personal taste. Thus, comfort food is food that makes you feel good, right? Hmmmmm.

Cooking Outside the Box- Being a good chef is as much an art as a science. Therefore chefs must rely on both sides of their brain. But in terms of the creative side, chefs can take one of two paths. Like many of the geniuses that have preceded them, their novel thinking can take them to new heights, or if pushed too far, render them lost in the clouds.

Cooking With Brains- The increased interest in food and cooking over the last couple decades has spawned a corollary fascination with food science. Some people not only want to know the hows, they want to know the whys. Humans are curious by nature and most of us need to know the underlying reason for phenomena. Why are older eggs better for hard-boiling? Why do severed apples, pears, and artichokes turn brown when exposed to air? Why can't you cook acidic foods in aluminum pans? Why are custards cooked in a water bath?
