Cheese Baquettes

2 medium tomatoes, sliced thin
1/2 pound mozzarella cheese sliced thin
2 tbs. oil
2 tbs. herb or wine vinegar
1/2 tsp. salt
1/4 tsp. pepper
3 ounce package cream cheese
2 tablespoons chopped fresh chives
1 baguettes or French bread loaf
Lettuce
Arrange tomatoes and mozzarella in a 13x9x2 inch baking dish. Combine next 4 ingredients, whisking
together. Pour over cheese and tomatoes. Chill 2 hours. Cut bread in half horizontally and toast under
broiler until light brown, or grill the tops. Cut each half in half, so you will have 4 toasted pieces. Mix
cream cheese and chives; spread evenly on each piece of bread. Arrange half of lettuce on bread next.
Drain tomatoes and cheese then arrange evenly on lettuce. Cut into small pieces to serve as an
appetizer.
