1 cup sugar 3/4 cup corn syrup, white or dark 1/2 cup cold water 3 packages plain gelatin Soak gelatin in cold water. Prepare an 8"X8" pan by lining with aluminum foil and spray with Pam. Meanwhile place remainder of ingredients into good sized pot (it WILL boil up). When gelatin is softened add gelatin to pot. Stir and cook until it reaches 242F-245F. (will take awhile) Once the temperature reaches around 235 it will go up very quickly. Place in bowl and beat on highest speed until you are afraid you are going to burn out the motor between 5-7 minutes. Pour into prepared pan. This will set up very quickly, within at least an hour. Cut apart and wrap in waxed paper. Contributor's notes: Would taste good with chopped nuts in it. Brown sugar would be good also. Backing off on the gelatin would probably make this more like a marshmallow. Adding more water would probably help also. I was trying to make chocolate marshmallows but this is what I got. Very chewy, almost like taffy. Per serving: 1468 Calories (kcal); 0g Total Fat; (0% calories from fat); 0g Protein; 388g Carbohydrate; 0mg Cholesterol; 303mg Sodium |
