Caramels, Whipping Cream

3 cups sugar
2 cups heavy cream
1 cup light corn syrup
1 teaspoon vanilla
1 cup chopped nuts, optional
2 ounces chocolate, unsweetened

Bring sugar, cream & corn syrup to a boiling point. Stir constantly. Continue cooking to 250 degrees. Stir gently. Add 1 tsp vanilla. If
desired, 2 squares metled chocolate or 1 cup chopped nuts may be added with the vanilla. Pour into buttered 8x8 pan. Let set overnight. Cut into squares & wrap in wax paper.

Variations: Add nuts, different extracts. Add instant coffee to cooked mixture. Substitute dark corn syrup, honey or maple syrup . Substitute brown sugar.
