1 cup of Fiber One cereal or All Bran 2/3 cup of milk 1 3/4 cup of flour 3/4 cup of chopped apple 1/2 packed brown sugar 1/2 finely shredded carrot 1/4 cup sugar 1/4 cup coconut 3 egg whites or 2 eggs 1 tablespoon vegetable oil 3 teaspoons baking powder 2 teaspoons ground cinnamon 1 teaspoons nutmeg 1 teaspoon vanilla 1/2 teaspoon salt Heat oven to 375 degrees. Line muffin tins with papers. Mix together cereal and milk. Let sit for 5 minutes. Stir in remaining ingredients. Pour into the muffin tins and bake for 20-25 minutes Contributor's note: These are also low fat and if you use just egg whites then there is no cholesterol in the muffin. |
