Mix zucchini, carrots, soup, sour cream, and onion together in a bowl. Melt stick of butter and add stuffing mix and seasoning packet. Add 1/2 stuffing mixture to zucchini and put in
casserole and top with remaining stuffing mixture. Bake at 350 degrees uncovered for 45 minutes.
