2 1/2 cups light beer
4 1/2 cups flour
1 teaspoon baking powder
1/2 cup sugar
pinch salt
4 tablespoons chopped green onions
1 1/4 cup mild, shredded cheddar cheese
cooking spray
1 1/2 ounce butter

Use 4 mini loaf pans sprayed with cooking spray. Preheat oven to 300 degrees F. Pour beer into mixing bowl and add half of the flour; mix well. In a separate bowl add the baking powder, sugar and salt to the remaining unmixed flour and blend completely. Place the two together in the mixing bowl and blend. Add the green onions and cheese; gently fold together. Divide evenly between the 4 loaf pans. Bake for 1 hour until lightly browned. Brush with melted butter when removing from oven to cool.

Contributor's note: Do not wrap bread until completely cooled or the bread will sour. Slice and serve warm or as toasted slices.
